Sprinkle the chicken pieces with salt and pepper, then use a small, sharp knife to make a 3cm-long cut in the fleshiest part of each one, creating a small pocket. Stuff each one with a teaspoon of Momma Cherri’s Cajun Jerk Seasoning – this creates a little surprise when you bite into the chicken. If you like it really hot, push a little seasoning under the skin too.
Toss the chicken pieces in the mixture of flour, salt, pepper, Cajun seasoning and garlic powder used for Southern-Fried Chicken and cook them.
