2 ripe avocados, peeled, stoned and diced

4 large, ripe pears, cored and diced

4 large tomatoes cut into eighths

1 juice of lemon

1/2 teaspoon sea salt

1/4 teaspoon cracked black pepper

4 tablespoons olive oil

1 few iceberg or Little Gem lettuce leavesor Little Gem
Directions
The first time I made this simple, tasty salad, I acquired all the ingredients at a market, where they were going cheap. They came to £3 in total and I made enough salad to feed 50 people!
Here the quantities have been reduced to feed 4.

Put the avocado, pears and tomatoes into a bowl and pour over the lemon juice. Gently mix in the salt, cracked black pepper and olive oil, then leave to stand for about 15 minutes, until the flavours have developed. Serve in the lettuce leaves |
